WHAT YOU'LL NEED

  • 1 salmon fillet
  • 1 orange segmented
  • ½ cucumber diced
  • Fresh dill, chopped
  • Optional: orange zest

DIRECTIONS:

  1. Place salmon in a saucepan and cover with water.
  2. Bring to a gentle simmer and cook about 8–10 minutes until opaque and flaky.
  3. Remove salmon and gently break into pieces.
  4. Combine with orange segments and cucumber.
  5. Drizzle with olive oil and sprinkle with dill.
  6. If desired, add a little orange zest by gently rubbing the outer peel of an orange against a fine grater avoiding the white inner part, which can taste bitter.
  7. Optional add: the Sweet Corn & Orange Salsa complements this dish well.
