Edamame Hummus
WHAT YOU'LL NEED
  • 1 (12-ounce) package frozen shelled edamame
  • 4 tablespoons extra-virgin olive oil
  • 2 cloves garlic, finely minced
  • 1/2 cup tahini
  • 1/2 cup water
  • 1/2 cup packed cilantro leaves
  • 1/4 cup lemon juice
  • 1 teaspoon salt
  • 3/4 teaspoon ground cumin

DIRECTIONS:
  1. Place edamame into a large pot and cover with salted water.
  2. Place over medium-low heat, bring to a simmer, and cook until tender, about 5 minutes; drain.
  3. In a small skillet, heat olive oil over low heat. Add garlic and let steep in oil for two minutes, then let cool.
  4. Place edamame, tahini, water, cilantro, lemon juice, and olive oil into a blender or food processor with garlic, kosher salt, and cumin. Blend until smooth.
