Chicken Adobo
WHAT YOU'LL NEED
  • 1 tablespoon olive oil
  • 5–6 chicken thighs, bone in, skin removed
  • 1 cup soy sauce
  • 1/2 cup rice vinegar
  • 1/2 cup water
  • 6–8 garlic cloves, minced
  • 4 bay leaves
  • 1 teaspoon ground black pepper

DIRECTIONS:
  1. Place a large frying pan on medium heat and add oil.
  2. Once the oil is warm, add the chicken thighs in a single layer.
  3. Cook until chicken has browned, about 4–6 minutes per side.
  4. While the chicken is browning, combine the soy sauce, rice vinegar, water, minced garlic, bay leaves, and black pepper in a bowl and mix well.
  5. Once the chicken has browned on both sides, pour the sauce over the browned chicken, cover, and reduce to a low simmer.
  6. Simmer for 10 minutes, or until the chicken is cooked through. (To be sure, check to ensure the internal temperature of the chicken has reached 165°F.)
  7. Remove the chicken and turn the heat up to medium. Continue to simmer the sauce in the uncovered pan until the volume has reduced to about half and the sauce is nice and thick, about 10–15 minutes.
  8. Pour the sauce over the chicken and serve warm.
