Cucumber Egg Salad Bites

WHAT YOU'LL NEED

  • 8 large eggs, hard-boiled and peeled
  • 1/4 cup mayonnaise
  • 2 tablespoons chopped dill or chives
  • 2 tablespoons mustard
  • Salt and pepper to taste
  • 1 large cucumber, thinly sliced

DIRECTIONS:

  1. Chop up the eggs and add them to a medium-sized bowl.
  2. Add in the mayonnaise, dill, chives, mustard, salt, and pepper and mix well.
  3. Make your finger cucumber sandwiches by spreading the egg salad onto a cucumber round and top with another slice of cucumber. If you’ve been advised to limit sodium, check with your care team before adding salt to your dish.
