Fudge-Pops
WHAT YOU'LL NEED
  • 1/3 cup cocoa powder
  • 2 tablespoons cornstarch
  • Pinch of salt
  • 2 cups milk of your choice
  • 1/3 cup honey or maple syrup
  • 1 teaspoon vanilla extract

DIRECTIONS:
  1. In a medium saucepan, whisk together the cocoa powder, cornstarch, and salt.
  2. Gradually whisk in the milk until the mixture is smooth and there are no lumps.
  3. Stir in the honey or maple syrup.
  4. Place the saucepan over medium heat. Cook the mixture, stirring constantly, until it thickens and comes to a gentle boil (about 5–10 minutes).
  5. Once it reaches a boil, continue to cook for another 1–2 minutes until it’s thick enough to coat the back of a spoon.
  6. Remove the saucepan from the heat and stir in the vanilla extract.
  7. Allow the mixture to cool slightly before pouring it into popsicle molds.
  8. Pour the mixture into ice cube trays or popsicle molds and insert toothpicks or popsicle sticks. Freeze for at least 4–6 hours.
