This healthier version of french fries is so simple and crispy. If you don’t like eggplant, you can try this with zucchini or sweet potatoes.

Baked Eggplant Fries
WHAT YOU'LL NEED
  • 1 medium eggplant, thinly sliced into small rectangles
  • 1 & 1/2 cups almond meal or oat flour (you can make your own with oats in the blender)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 egg
  • Optional: 1 teaspoon fresh rosemary, chopped
  • Optional: 1 teaspoon dried thyme
  • 2 tablespoons olive oil

DIRECTIONS:
  1. Preheat the oven to 450°F. Line a baking sheet with parchment paper.
  2. Stir together the almond meal, rosemary, thyme, paprika, and salt in a shallow dish.
  3. In a separate dish, beat the egg and oil together.
  4. Dip an eggplant slice into the egg mixture and then dredge in the almond meal mixture. Place on the baking sheet and repeat with the remaining eggplant.
  5. Bake for 20–25 minutes, turning once, until the fries are crispy and golden brown.
