Vegetable “Fried” Rice
WHAT YOU'LL NEED
  • 2 tablespoons avocado oil or olive oil
  • 1 medium white onion, diced
  • 1/2 small green cabbage or 1/2 cups of frozen spinach
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable broth or water
  • 1 cup frozen mixed vegetables
  • 1 cup frozen edamame
  • 2 cups cooked white rice or brown rice

DIRECTIONS:
  1. Heat a large skillet over medium heat.
  2. Add your oil, then add the onion and a pinch of salt, and sauté until the onions cook down, for about 3 minutes.
  3. Add the cabbage or spinach and soy sauce and stir.
  4. Add the broth or water, lower the heat slightly and sauté until the cabbage or spinach is tender and the liquid begins to go away, for about 2 minutes.
  5. Mix in the frozen vegetables and edamame and stir until tender.
  6. Add your cooked rice and stir to combine. Season with salt to taste.
