Eggs & Black Bean Breakfast
WHAT YOU'LL NEED
  • 2 teaspoons olive oil
  • 2 large eggs
  • 1 (16-ounce) can black beans, rinsed
  • 1/2 (8-ounce) can crushed tomatoes
  • 1/2 lime
  • Salt and pepper to taste

DIRECTIONS:
  1. Heat the oil in a large pan on medium heat.
  2. Crack the eggs into the pan.
  3. Once the eggs begin to cook, add the beans, crushed tomatoes, and a dash of salt.
  4. When the mixture has warmed throughout and the eggs are ready, remove the pan from the heat.
  5. Squeeze half a lime over the top and serve.
