Spicy Black Beans
WHAT YOU'LL NEED
  • 2 garlic cloves, minced
  • 1/2 teaspoon cumin
  • 1 tablespoon olive oil
  • 3 cups cooked black beans or 2 (15-ounce) cans, drained and rinsed
  • Salt and pepper
  • Pinch of cayenne pepper
  • Small handful (2 to 3 tablespoons) fresh cilantro leaves, chopped

DIRECTIONS:
  1. Slice your mushrooms into 1/2-inch thick slices.
  2. Heat the oil in a large pan or skillet over medium heat.
  3. Add the mushrooms and toss with the olive oil. Let them sit for 4–5 minutes before stirring.
  4. Stir the mushrooms and flip to brown both sides, then cook for another 2–3 minutes.
  5. Reduce the heat to medium low and add the garlic and optional butter (for a richer flavor) and stir.
  6. Continue to cook for another 3–4 minutes, stirring occasionally until cooked.
  7. Season with salt, pepper, and optional parsley.
