Quick Veggie Burrito
WHAT YOU'LL NEED
  • 1 cup canned black or pinto beans
  • A dash of olive oil
  • Half an onion (red or white), chopped
  • 1 egg
  • 1 avocado
  • 1 tortilla, any kind
  • Lime and salt to taste

DIRECTIONS:
  1. Boil the beans for 4–5 minutes in 4 cups of water.
  2. Add your chopped onion to a pan with a dash of olive oil and cook them until they’re lightly browned. Then, add the beans to the onion and smash them with a fork.
  3. To fry the egg: heat a non-stick pan over medium-low heat and add a small amount of olive oil. Once the pan is hot, gently crack an egg into the pan, being careful not to break the yolk. Cook for 2–3 minutes, until the whites are set but the yolk is still runny.
  4. Mash the avocado and onion with lime juice and a touch of salt for homemade guacamole.
  5. Put the cooked, mashed beans on the tortilla.
  6. Add the guacamole and the fried egg, and wrap.
