WHAT YOU'LL NEED

  • 1 chicken breast
  • 1 cucumber diced
  • Juice of ½ lemon
  • 1 tablespoon olive oil
  • Fresh parsley, chopped

DIRECTIONS:

  1. Place chicken breast in a saucepan and cover with water.
  2. Bring to a gentle simmer and cook 12–15 minutes until cooked through.
  3. Remove chicken and shred with a fork.
  4. Combine chicken with cucumber.
  5. Drizzle with lemon juice and olive oil and sprinkle with parsley.
  6. Optional add: the Black Bean & Orange Citrus Salad complement this bowl well.
