WHAT YOU'LL NEED

  • 1 cup dried black beans, soaked overnight (or 2 (15-ounce) cans black beans, rinsed and drained)
  • 1 orange, chopped
  • 1 tablespoon olive oil
  • Fresh cilantro, chopped
  • Juice of ½ lemon or lime

DIRECTIONS:

  1. If using dried beans: drain after soaking and place in a pot with fresh water. Bring to a gentle simmer and cook for 60-90 minutes, or until tender, then drain. If using canned beans: rinse and drain well before using.
  2. Place the beans in a bowl and gently mix in the chopped orange.
  3. Drizzle with olive oil and citrus juice, then toss with fresh cilantro until evenly combined.
