Lemon Chicken & Carrot Ribbon Salad

WHAT YOU'LL NEED

  • 1 chicken breast
  • 2 carrots shaved into ribbons
  • Juice of ½ lemon
  • 1 tablespoon olive oil
  • Fresh parsley, chopped

DIRECTIONS:

  1. Place chicken breast in a pot and cover with water.
  2. Simmer gently for 12–15 minutes until cooked through.
  3. While the chicken is simmering, shave the carrots into ribbons using a vegetable peeler.
  4. Remove chicken from the pot and shred.
  5. Combine chicken with carrot ribbons.
  6. Drizzle with lemon juice and olive oil and sprinkle with parsley.
  7. Optional add: the Crisp Corn & Cucumber Garden Salad pair well with this dish.
