Creamy Spinach-Salmon Dip with Veggies
WHAT YOU'LL NEED
  • 1 pouch salmon, drained and flaked
  • 1 cup unsweetened Greek yogurt
  • 2 Tbsp fresh lemon juice (about ½ lemon)
  • ¼ onion, very finely minced
  • 1-2 cloves garlic, minced or grated
  • ½ cup fresh spinach, finely chopped
  • ½ tsp salt (adjust to taste)
  • ¼ tsp freshly ground black pepper
  • Optional: 1 Tbsp chopped fresh dill or parsley

For Serving (Crudité):

  • Carrot sticks
  • Cucumber rounds
  • Broccoli florets

DIRECTIONS:
  1. In a medium bowl, add the drained salmon and flake it apart with a fork.
  2. Stir in the Greek yogurt, lemon juice, garlic, onion, salt, and pepper until smooth and well combined.
  3. Fold in the chopped spinach (and herbs, if using). Taste and adjust seasoning with more lemon juice, salt, or herbs as desired.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve chilled, surrounded by carrot sticks, cucumber rounds, and broccoli florets on a platter for dipping.
