WHAT YOU'LL NEED
  • 4 cups (packed) spinach (if using frozen spinach, use 1 cup instead of 4 and drain extra water)
  • 2 cups water
  • 2 tablespoons olive oil
  • 1/4 onion, finely chopped
  • 3 cloves garlic, crushed
  • 2 cups brown rice, rinsed and drained
  • 1 teaspoon salt
DIRECTIONS:
  1. Blend the spinach and water together in a blender. 
Set aside.
  2. Add olive oil to a large saucepan and turn up to a 
medium heat.
  3. Once the oil is warm, add the onion and garlic and stir.
  4. Sauté for about 3–5 minutes or until the onion starts to become more clear and soft.
  5. Add the rinsed rice and stir. Cook for another 3–5 minutes, stirring constantly.
  6. Stir in the spinach liquid mixture and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 45–55 minutes, or until all the liquid has been absorbed.
  8. Remove rice from heat and fluff with a fork.
