WHAT YOU'LL NEED
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 large cucumber, chopped
  • 3–4 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • Optional: 1/2 cup olives
  • Optional: 1 cup feta cheese, crumbled
  • Salt and pepper to taste
DIRECTIONS:
  1. In a large bowl, mix together the olive oil, lemon juice, salt, and pepper.
  2. Add the chopped cucumber, tomatoes, and sliced red onion to the bowl.
  3. If you’re using olives and crumbled feta cheese, add them in as well.
  4. Toss well then serve.
