Fresh Berry Quinoa Bowl with Coconut Cream and Almonds

Love fresh berries with cereal or oats in the morning? Here’s your new favorite protein fix, with amino acids and antioxidants. You’ll love the way this decadent pairing of sweet, tart, and crunch work together for a delicious breakfast.

Serves 2-4

Ingredients:

1-3 cups leftover quinoa, amaranth or g free oats, your choice of grains

Fresh berries:

Sliced strawberries, blueberries or raspberries, your choice of berries

Raw almonds, sliced

Coconut milk, or coconut cream (use in moderation) Or try almond/cashew milk

 

Directions:

Place the quinoa into your serving bowls, top with fresh berries, of your choice, followed by the sliced almonds, finish with coconut milk/almond milk or coconut cream and serve. Add a dash of cinnamon if you’d like!
