Stress-free weeknight meals
This dish is an easy way to sneak some omega-3-rich seafood into your diet if you generally don't enjoy a fishy taste. You can use snapper, white fish, or any type you have on hand. Just make sure your tomatoes are nice and ripe, which adds not only a sweet flavor but also lycopene, a powerful antioxidant found in tomatoes that’s more abundant when cooked.
Ingredients
- 1 pound (1⁄2 kg) red snapper (or other type of fish), cleaned and gutted.
- 2 tablespoons of avocado oil, coconut oil or ghee
- 1 large onion, sliced
- 3 or 4 medium-sized tomatoes, chopped
- 2 eggs, beaten
- 1⁄2 cup water
- A dash ground pepper
- 1 bunch parsley (for garnish)
Directions
- Slice the cleaned fish into six pieces.
- Heat the oil or ghee in a frying pan.
- Sauté fish until golden brown. Set aside on top of a paper towel.
- Sauté onion and tomatoes (2-3 minutes).
- Add the water and bring to a boil, then add the fish and simmer for 3 minutes.
- Slowly add the eggs while continuously mixing. Cover and let simmer for 5-10 minutes.
- Season with fish sauce and ground black pepper.
- Place in a serving platter and garnish with parsley.
