Easy Caesar Dressing

INGREDIENTS

  • 1 oz. anchovies
  • 1 cloves garlic 
  • 1 egg
  • 1 tbsp lemon juice
  • 1/2 cup, plus 1 tbsp of olive oil
  • 1/2 tsp Dijon mustard
  • 1 tbsp of parmesan cheese 

DIRECTIONS

  1. Drain the anchovies and add to a blender.
  2. Add the garlic, egg, lemon juice, EVOO, Dijon mustard, and cheese to the blender. 
  3. Blend for a full minute or longer until all ingredients are fully blended to a thick, smooth, creamy texture. 
  4. Best served immediately but will keep in the refrigerator for a day.
