Ampalaya (Bitter Melon) With Egg

Ampalaya (or bitter melon) is often used to help regulate blood sugar, since it’s been shown to improve several markers of blood glucose levels. This recipe pairs ampalaya with eggs, which provide the protein for strength, and focus-boosting choline — a winning combo on busy weekdays.
 

Ingredients  

  • 1 cup onion, chopped
  • 6 cloves garlic, crushed
  • 1 tablespoon coconut oil 
  • 2 eggs, beaten
  • 2 cups Ampalaya, sliced
  • 2 teaspoons soy sauce
  • 1⁄2 teaspoon black pepper 
      

Directions

  1. Using a large skillet, lightly sauté onions and garlic in warm coconut oil.
  2. Add the sliced bitter melon. Cover and simmer until bitter melon turns green. 
  3. Pour the beaten eggs over the bitter melon and cover to cook through (about 3-5 minutes)
  4. Uncover, mix, and season with soy sauce and pepper.
