These gluten free bars made with almond flour give energy balance and sassy sweetness. Made without refined sugar and with walnut oil they will keep you grounded with taste so light and zany you will think about lifting off.
This is guilt free indulgence!
INGREDIENTS:
1 ½ Cups almond flour
½ tsp fine sea or Himalayan salt
2 Tbsp & ¼ cup walnut oil
1 Tbsp & ¼ scant cup honey
1 Tbsp vanilla
3 eggs
¼ cup fresh squeezed lemon juice
¼ cup fresh squeezed key lime (or lime) juice
DIRECTIONS
Preheat the oven to 350 degrees. Grease an 8 inch glass baking dish with an extra tsp of walnut oil.
Whisk almond flour and salt in a large glass bowl.
In another small glass bowl, whisk 2 Tbsp walnut oil, 1 Tbsp honey and vanilla. Stir into the almond flour mixture.
Press into the glass baking dish as the crust.
Bake for about 15 minutes until golden.
In a blender or food processor, combine the remaining ¼ cup walnut oil, ¼ cup honey, eggs, lemon and lime juice.
Blend until smooth.
When crust is baked golden, pour the liquid over the crust (do not cool the crust).
Bake for about 18 minutes until lightly golden and set (just a little jiggle).
You can jiggle too because you are going to love these bars.
Your mouth might already be salivating.
But wait for it… let the dish cool on a rack for 30 minutes before refrigerating. The bars will completely set in the refrigerator in couple of hours.
Now you may cut into squares and serve!
