Do what you can with what you have!

On Friday’s I batch cook my weekly meals – it’s my part of my new questionable vegetarian diet/routine, I usually do it blissfully, with music or a podcast blaring as bubs at daycare and big bubs is at school.

This masterpiece is supposed to be green curry, the only thing green curry about it is, the word “green curry” from the jar label. As we are in self-isolation and no tinned tomatoes, chickpeas or coconut green, I thought I would use some other staples in the cupboard and fridge to patch it up.

  • 3 cups of veggie stock
  • 4 tomatoes
  • spring onion
  • eggplant
  • potato
  • pumpkin
  • sweet potato
  • cauliflower
  • corn
  • broccoli
  • green curry paste (a bit more than I usually use) #HOT

Cook tomatoes in vegetable stock, add some tomato paste and seasoning, fry off curry paste, add it all together and cook. YUM!

We are now on an hour by hour, day by day basis so we need to do what we can with what we have and you know what, the results can be really exciting and surprising.

In startup world we use the word “pivot, fail fast” yadda yadda yadda when really the magic word is patch it, do what you can with what you have!

ps – I had do drop into bubs daycare today and they have a really good setup, they are also stripping the centre and apart from it being as clean as it has ever possibly been, the team will be painting, a task in the “to-do list” and now they have the time to do it, that’s what I call patching it – well done team X
