Red Pepper Soup

A tasty as well as delicious preparation, the red pepper soup makes for a healthy supper and is

loved by most foodies.

Ingredients:

● 2 onions (chopped)

● 1/4 cup butter (cubed)

● 4 garlic cloves (minced)

● 2 potatoes (diced)

● 2 jars of roasted red peppers (drained, dried, chopped)

● 5 cups chicken broth

● 2 cans of pears in juice

● 1/8 teaspoon of cayenne pepper

● 1/8 teaspoon of black pepper

Preparation:

● Put butter in your dutch oven and saute the onions until they turn brownish. Add garlic

and saute for two more minutes. Then, add the tomatoes, roasted peppers and the chicken

broth and bring it to a boil.

● In the next step, reduce the heat and simmer it. Then, cover the lid and wait for the

vegetables to get tender.

● After the vegetables are tender, stop heating and add the pears in juice.

● Let the soup cool. After cooling, puree the soup in batches. Return the soup to the oven

and stir it with cayenne pepper ad black pepper. Serve with croutons.

Chicken in Coconut Milk

The dish is a speciality in South Asian countries and is famous for its rich taste and the variety of

spices that go into preparing it.

Ingredients:

● 2 pounds chicken

● 1 teaspoon red chilli powder

● 2 teaspoons coriander

● 1 teaspoon cumin

● 1/2 teaspoon fennel (powder)

● 1/4 teaspoon cardamom

● 2 tablespoons vegetable oil

● 1 onion (turned into a paste)

● 1 teaspoon garlic paste

● 1 teaspoon ginger paste

● 1 stick cinnamon

● 2 star anise

● 4 cloves

● Curry leaves

● 4 potatoes (cut in quarters)

● 2 tomatoes (chopped)

● Salt to taste

● 1/2 cup coconut milk

Preparation:

● Take the chicken in a large bowl and add chilli powder, coriander powder, cumin

powder, fennel powder, and cardamom powder to the bowl and mix them thoroughly

making sure that the chicken is properly coated with the spices. Add a little water and

marinate the mixture for 45 minutes.

● Take the dutch oven and put it on medium heat. Add the cooking oil to the oven and put

in the whole spices. Stir the spices until they release the aroma.

● Add the ginger, garlic and onion paste and saute them in the oven for at least two

minutes.

● Add the chicken, potatoes and tomatoes and then pour a sufficient amount of water. Cook

the chicken for twenty minutes accompanied with occasional stirring. Add salt.

● Add the coconut milk and bring the preparation to a boil. Turn off the heat as soon as it

starts boiling.

Chicken Pot Pie

If you love cooking one-pot meals, this recipe is for you. The preparation is hassle-free and the

recipe comes with plenty of health benefits.

Ingredients:

● 1 tablespoon olive oil

● 1 clove garlic (minced)

● ½ onion (chopped)

● 2 ¼ cups milk

● ¼ cup flour

● 2 cans cream of chicken soup (condensed)

● 1 potato (chopped)

● 12 oz frozen vegetables (corn and carrots variety)

● 1 tsp salt

● 1 tsp pepper

● 2-3 cups rotisserie chicken (shredded)

● 1 sheet of puff pastry dough

Preparation:

● Preheat your oven to 350 degrees and put your dutch oven on medium heat. To the dutch

oven, add olive oil. Add onions and garlic to the pot and stir till they soften.

● Mix your milk and flour and whisk it nicely. Add to the pot.

● Now, add all the ingredients to the pot leaving the chicken and puff pastry aside. Make

sure the potatoes are boiled properly and prepare a thick mixture of the ingredients.

● Now, add chicken to the pot and cook it along with the other ingredients.

● After removing the oven from the heat, take the dough and place it inside the dutch oven.

Trim the edges of the dough where necessary.

● Bake the preparation for around 40 minutes until the dough turns brownish. Then, let it

settle down for 5 minutes and serve hot.

Asian Chicken Noodles

The chicken noodle soup is easy to make, contains nutritious ingredients and is loaded with

delectable flavour. It makes for a perfect dinner.

Ingredients:

● 1-1/2 pounds boneless skinless chicken cubes

● 1 tablespoon sesame oil

● 3 medium carrots (sliced)

● 2 celery ribs (chopped)

● 1 medium onion (chopped)

● 6 cups chicken broth

● 1/3 cup teriyaki sauce

● 1/4 cup chilli garlic sauce

● 1 package wonton wrappers, cut into 1/4-inch strips

● 2 cups sliced mushrooms

● 1/3 cup celery leaves (chopped)

● 1/4 cup fresh basil (minced)

● 2 tablespoons cilantro (minced)

● 2 green onions (sliced)

Preparation:

● Heat the sesame oil in the oven and cook the chicken over medium heat.

● After the chicken has been cooked, transfer it. In the same pan, add carrots, celery and

onion. Saute them until tender.

● Pour the broth into the oven and put in the teriyaki sauce, chilli garlic sauce and chicken.

● Bring the mixture to a boil, reduce the heat and simmer it for twenty minutes.

● Add the other ingredients such as the wonton strips, mushrooms, basil and cilantro. Cook

for another ten minutes until the mushrooms and the wonton strips get tender.

● While serving, sprinkle the green onions on top.

Braised Lamb Shanks

Cooked in red wine broth, this dish is a treat to your belly and is the perfect pick for a sumptuous

family dinner.

Ingredients:

● 3 tablespoons olive oil

● 1 tablespoon butter

● 1 large onion (chopped)

● 1 rib of celery (chopped)

● 1 medium carrot (chopped)

● 4 cloves garlic (sliced)

● 4 lamb shanks

● Dash of salt and freshly ground black pepper

● 1 cup dry red wine

● 3 tablespoons tomato paste

● 2 cups chicken broth

● 1 cup beef broth

● 1/4 cup cider vinegar

● 4 sprigs of fresh thyme

● 1 bay leaf

Preparation:

● Preheat your oven to 325 degrees and in your dutch oven, add olive oil along with one

tablespoon of butter. Add the onion, celery and carrot and cook until they soften. Add

garlic and stir for two more minutes.

● Transfer the contents to a larger dutch oven and add two more tablespoons of olive oil.

Put salt and pepper on the lamb shanks and saute them over medium flame for ten

minutes.

● Add the lamb shanks to the oven accompanied by the vegetables. Deglaze the preparation

with red wine and simmer it.

● To the oven, add tomato paste, chicken broth, beef broth and vinegar. Bring the

preparation to a boil and then lower the heat. Put in the fresh thyme and bay leaf.

● Cover the lid of the dutch oven tightly and bake the preparation for two hours. After that,

remove the lid and let it bake for another one hour until the lamb gets tender.

● Serve with mashed potatoes.
