Lindsey & Ryan Cunningham

RollinGreens was founded in 1980 by the Cunningham family in Boulder, Colorado. They created the first organic and local food truck in the city. With three kids and one more on the way, they retired the food truck. 30 years later, in 2011, youngest Cunningham son Ryan and his wife Lindsey brought the food truck back to life. They catered 40 weddings a summer, and were a Boulder farmers market staple. After five hard working years, they wanted to create scalability, so they took one of their top selling items and launched a packaged product line. Millet Tots are the company's version of a tater tot made with an organic ancient whole grain. RollinGreens is a plant-based company taking American classics and giving them a Boulder twist!
